Whisky from Bimber Distillery will enter the Australian market this year with confirmation they’ve partnered with Scott Farrow’s Wonderland Drinks for distribution.

Founded in 2015 in the London suburb of Park Royal, the distillery released its first single malt in September 2019. Since inception, the distillery have placed a large emphasis on provenance and source their English-grown barley from a single farm in Hampshire. Using both Concerto and Laureate varietals it is floor malted at Warminster Maltings.

Bimber’s Australian exclusive casks

Founded by head distiller Darius Plazewski, the distillery has a strong Australian tie with co-owner and director Farid Shawish originally from Sydney.

“Whilst Scotland continues to be the gold standard for traditional whisky styles there are many examples of small and innovative ‘new age’ distilleries all over the world which have our attention,” Farrow told WhiskyArdent.

“We think Bimber in London is one of these and we’re absolutely delighted to have commenced a partnership to represent them in Australia.”

The distillery bottled two Australian-exclusive casks, an American oak virgin cask expression and a sherry cask expression, in October 2020, both of which featured in a virgin tasting recently with Melbourne bar Elysian.

Wonderland Drinks also distributes Scottish independent bottler North Star, Ireland’s Hyde and Canada’s Shelter Point distillery.

Stock is expected to arrive in Australia in the coming months.
